À propos de la forme - Inspirés par le profil d'un couteau de chef européen traditionnel, les gyutos sont des couteaux polyvalents avec une légère tendance à la découpe de la viande, et « gyuto » se traduit même par « épée de vache ». Si vous voulez un seul couteau pour tout faire, c'est celui-ci. La lame plus longue donne généralement à la lame un équilibre vers l'avant qui lui permet de travailler pour vous. Bien que la lame soit idéalement glissée vers l'avant ou vers l'arrière lors de la coupe, elle est également excellente pour les personnes qui préfèrent « faire basculer » leur couteau pendant qu'elles coupent.
Le Gyuto de 180 mm est idéal pour ceux qui préfèrent un couteau plus petit.
À propos de Takamura Akagouhan - Takamura Hamono (forgeron) se trouve dans le village de Takefu (Echizen) dans la préfecture de Fukui. Il est dirigé par la 3ème génération de forgerons, Terukazu Takamura, qui a hérité de l'atelier de son père Toshiyuki Takamura San. Avec plus de 30 ans d'expérience, ses lames sont connues pour leur tranchant extrêmement raffiné et durable.
Le R2 est un acier inoxydable en poudre très dur qui permet un tranchant extrêmement durable, et il est plutôt résistant par rapport à de nombreux aciers en poudre super durs. Avec une lame légère et fine, ce couteau est capable d'un tranchant extrême et glisse à travers les aliments. Le manche est en bois de Pakka avec un traversin soudé et est pratiquement indestructible.

Store manager Owen was super helpful and patient as he showed me different knives that might fit my needs. When I first laid eyes on this Takamura knife, my heart skipped a beat. And after holding it in my petite hand, I WAS IN LOVE!! Both its lightness and shape make it so easy to handle all sorts of ingredients.
