L'un de nos styles de couteaux préférés est le honesuki ou couteau à volaille japonais. Si vous aimez préparer des brochettes ou si vous voulez simplement apprendre à découper un poulet pour préparer du poulet et des gaufres, un honesuki, combiné avec la connaissance de la façon de l'utiliser, est un excellent ajout à votre arsenal.
Pour 150 $, vous recevrez deux poulets d'un boucher local et durable pour vous entraîner, ainsi qu'un crédit de 75 $ en magasin pour l'achat de votre propre honesuki ou couteau à désosser. L'un de nos employés vous montrera comment découper les volailles en vue de deux recettes : le poulet frit au babeurre et les morceaux désossés pour brochettes, que vous finirez ensuite de préparer à la maison.

Chicken Butchery Classes in Calgary offer a hands-on experience to learn how to expertly prepare chicken at home. The class includes two chickens from a local, sustainable butcher and a $75 credit towards a honesuki or boning knife. Students will learn to break down the birds and prepare two recipes: buttermilk fried chicken and Yakitori. The class is highly recommended for its excellent instruction and small size, allowing for one-on-one learning. Halal chicken options are available by request.

"I watched the videos produced by knifewear online and it covered the basics, this class provides a much more detailed experience. A selection of Honesuki knives were provided for each of the participants to try, and a detailed explanation of the different knives was given. The Chicken cutting itself was great because the instructions were clear and well thought out. the basic cuts were explained but then more details were given about the smaller cuts and what they are typically used for. I had never heard of a popes nose... The instructor was very patient and helpful demonstrating the cuts and helping each of the students as they had questions. If you are even remotely interested in this or know of a friend or loved one who are interested this is a great learning treat for yourself or gift for someone special."

"Fantastic class! I would definitely recommend to individuals or couples to take. Don’t have to be a trained chef to take this class. The instructors do a great job walking you through step by step and ensure everyone is looked after. Fantastic skill to learn, I’m so happy I took the class. They also provide a range of knives to test so you can get a feel for a couple different ones throughout the process to help if you’re interested in buying a Honesuki. Plus you get to take home some butchered chicken along with some recipes!"
"I loved this class! We were taught two different ways to cut a chicken, French and Japanese. The honesuki is a unknown knife to me, it was good to get a feel for it and appreciate how effective it is. You go home with two whole chickens, 75$ toward a sweet knife and a great recipe! Can not go wrong."
