Notre première question était : pourquoi ai-je besoin d'une cocotte en terre cuite sophistiquée pour cuire le riz ? Une cocotte à riz/autocuiseur/casserole ordinaire ne suffit-elle pas ?
  • La réponse est assez évidente après coup : Elles sont superbes, et plus important encore, les donabes, en particulier les donabes à riz, préparent le meilleur riz qui soit.
Les donabes ont une excellente conductivité thermique. Elles chauffent beaucoup plus progressivement que le métal, faisant ressortir plus de douceur et d'umami dans le riz. L'amylase dans le riz, qui convertit l'amidon en sucre, opère sa magie autour de 40 à 50 °C.

Parce que les donabes chauffent plus uniformément et lentement, l'amylase peut vraiment agir et vous offrir le riz le plus savoureux possible !

Elles sont également dotées d'un système à double couvercle qui aide l'humidité à s'évaporer plus lentement, de sorte que le riz ressort moelleux et aérien. Encore plus que d'une cocotte à riz sophistiquée !

Ceux-ci sont destinés aux personnes qui aiment vraiment cuisiner et maîtriser des plats spécifiques, en particulier ceux qui aiment la cuisine japonaise. Il comprend une spatule à riz et une tasse japonaise en acier inoxydable de 180 ml*. The only way to cook rice!

"I have tried several rice cookers over the years left somewhat satisfied with a few that lasted a little while until they started burning rice on the bottoms spoiling the taste of fresh made rice and they were all difficult to clean nicely saying they were dishwasher safe and over a year or two lost their coatings…. I have owned this Kurobuki Rice Cooking Donabe for over a month now and used it more on the one month than I have used other cookers within a year. Follow instructions provided and you’ll not be disappointed. I’ve made wild rice, short grain white rice that provides the best donabe ever for homemade sushi, and brown rice. This provides an excellent even heat source and has yet to burn any rice or cause any reason for disappointment in a meal. This is literally the rice pot you never knew you needed until you have it!"

Best rice I've ever had

"I want to preface: yes, there are instructions, and no, they are not in English, but that Google Translate is very easy to use, and after you've done it once, you'll be fine. FOLLOW THE DIRECTIONS. This donabe does not work the same way as a normal pot for rice, due to the double-lid. Always ensure the double lid handles are lined up the same way. This donabe makes the best rice I've ever had, and I've eaten rice every day for most of my life. This makes rice that is glossy, perfectly cooked through, and never mushy. It doesn't even stick to the sides of the pot. It's just perfect. Rice cooked this way seems to taste a bit different, almost sweet, and with more umami. If you can prioritize starting your rice at the beginning of your meal prep, you'll be rewarded with delicious rice to go with your meal."
