À propos de TOJIRO Reppu - Parmi les cuisiniers, les chefs et même les passionnés de couteaux, TOJIRO est reconnue comme l'une des meilleures marques pour initier les gens aux couteaux japonais haute performance. La majorité des lames TOJIRO sont forgées à la machine à partir d'acier haut de gamme, des artisans experts réalisant toutes les autres étapes pour garantir la meilleure qualité.
Ces lames sont tellement cool. J'adore le fait que toute la gamme ait des pointes inclinées impressionnantes, un style originellement inspiré du kiritsuke traditionnel à simple biseau et un excellent moyen d'ajouter instantanément de la personnalité à un couteau. Ce design rend également la pointe plus précise et lui donne un peu plus de poids, lui permettant de traverser les légumes sans effort.
En plus de son design élégant, ce couteau est également fabriqué à partir de l'un de mes aciers préférés : l'acier inoxydable SG2 est un matériau super moderne, capable de conserver un tranchant incroyablement aiguisé pendant des siècles. J'aurais aimé que cette gamme existe lorsque je travaillais dans les restaurants ; cela m'aurait épargné beaucoup de temps et un poignet douloureux !
À propos de la forme - Inspirés par le profil d'un couteau de chef européen traditionnel, les Gyutos sont des couteaux polyvalents avec une légère tendance à la découpe de viande. "Gyuto" se traduit par "épée de vache". Si vous voulez un seul couteau pour tout faire, c'est celui-là. Commençant à 180 mm, les Gyutos peuvent atteindre la longueur ridiculement longue (et géniale) de 370 mm. Pour le cuisinier à domicile ou professionnel, nous recommandons un Gyuto mesurant entre 210 mm et 270 mm de long.

"Finally got my first knife. I never seem to get near a store so just ordered a knife that looked interesting. Love the handle and the light weight, a joy to use. It is of course sharpened to perfection and being a bit thinner than my German knives it cuts like a Lazer. Colour me happy. !"
"After trying the Santoku version in the Cut Like a Chef class I knew I was going to look for something on the lighter side, but in the longer length. Cory was nice enough to pull out another eight or so knives, but the light weight and balance of the Reppu were perfect for me. After a weekend of chopping up our yearly garden harvest I can really say I am pleased with the performance, and my wrist thanks me for not using the old western style Santoku."
