À propos de la forme - Inspirés par le profil d'un couteau de chef européen traditionnel et la pointe redoutable d'un Kiritsuke (traditionnellement un couteau à simple biseau), les Kiritsukes à double biseau sont des couteaux polyvalents avec un léger penchant pour la découpe de viande. Si vous voulez un couteau pour tout faire, et avoir l'air plus cool que votre ami, c'est le couteau qu'il vous faut. Pour le cuisinier à domicile ou professionnel, nous recommandons un Kiritsuke mesurant entre 210 mm et 240 mm de long.

À propos de Nigara Hamono - Nigara-san est un fabricant de couteaux relativement nouveau de la préfecture d'Aomori, mais ce n'est pas une nouvelle entreprise. La société existe depuis plus de 350 ans, remontant à leurs ancêtres forgerons d'épées. La fabrication de couteaux est une petite partie de ce qu'ils font ; ils produisent également de grandes poutres d'acier et d'autres éléments pour les bâtiments ! Go Yoshizawa, 35 ans, est un jeune forgeron qui est le fils du président de la société et a décidé de revenir à leurs racines de forgerons. Il fabrique maintenant des couteaux tsuchime uniques et superbes et quelques Damas pliés à la main.

Stainless steel is super handy because it doesn’t rust or stain easily like carbon steel. That said, remember it is stain-less, not stain-never. While it is much easier to care for than high-carbon steel, it does benefit from proper use: use it, wash it, dry it and put it away. Always avoid the dishwasher!

USE  

• Only cut food you can bite through with this knife. Hard foods can chip the blade. No olive pits, bones,  lobster shells, woody stems or parmesan rinds. Cutting frozen food is especially bad  because the cold will make hard steel even more brittle. If you wouldn’t chew it with  your own teeth, don’t cut it.  

• Your cutting surface is the biggest culprit of dulling your knife. Use wood. End  grain wood is especially good. Plastic can be fine too, but certainly not glass,  granite or bamboo

• The edge of your knife works best sliding forwards or backwards. Scraping the  knife edge sideways will dull or damage the edge. Instead, use the spine of the knife to move foods across the cutting board. Do not twist the edge or pry with the edge, this is the worst screwdriver you ever bought and these motions will certainly  damage the edge. Listen to the knife! If you can hear the edge making a “tink”  sound on the cutting board, change what you are doing.  

CLEANING  

• After use, wash the knife by hand with regular dish soap, rinse with hot water  and dry by hand immediately. Dishwashers are very bad for knives.  

• Wood handles may dry out over time and exposure to water. Simply treat them  with some food safe wax.

STORING  

• Protect the edge for your safety and to avoid edge damage. A simple blade cover  will do the trick if you keep knives in a drawer or in a travel case.  

• The convenient wall magnet made with wood is a great way to show off your knives.  Be sure to put it back spine first, then roll it onto the blade face. This will keep the  edge from contacting the wood first.  

• The good ol’ counter top block can keep knives at the ready and protected, so  can drawer inserts. Whatever the method, it should keep the edge from touching  anything else.

Slightly Disappointed

"Il start by saying the Knife was super sharp out of the box and still does the job. the fit is superbe for anyone with large hands. Has a badass shape I’m in love with. But after about 2.5 months of daily line, use it’s been chipped multiple times and hasn’t held up like my other Japanese knife has. I wish it was a little bit stronger but overall still satisfied. Just needs more sharpening than other knives it seems."

Well crafted piece of kit

"I bought this knife for my more precision work and it has been amazing! If you are looking for a work horse that you can run through root vegatables though this is not the knife for that. Hand feel and weight distribution is slightly on the blade side but creates no fatigue eve when used for a few hours. Edge retention is great, honing occasionally. Overall it is a beautiful knife and would recommend to anyone who does delicate knife work."

Beautiful Blade with a Razor Thin Edge

"This knife is gorgeous. Extremely sharp. Edge is very fine and actually chipped it on the first use cutting a pepper (I was devastated). Took it back to the Vancouver shop, they were able to take the chip out and refine the edge, which has made it much more durable. They even sharpened my other knives free of charge! Knife gets 4/5 stars, the shop gets 6/5! Can't say enough great things about the Vancouver team!"

Scary sharp, super sexy

"The look of this knife, and the "prestige" of owning and using a nice Kiritsuke were all I needed to buy this one sight unseen. What I didn't expect is how unbelievably sharp it is. When I excitedly unboxed it, gleaming with pride while I handled a new tool in my arsenal, the room suddenly felt colder. I could faintly hear babies crying in the distance. To this day I hear footsteps around my kitchen as I'm using it. This is a scary goddamn knife."
