À propos de la forme - Inspiré par le profil d'un couteau de chef européen traditionnel, les Gyutos sont un couteau polyvalent avec une légère tendance à couper la viande. « Gyuto » se traduit par « épée de vache ». Si vous voulez un couteau pour tout faire, c'est celui-ci. Commençant à 180 mm, les Gyutos peuvent atteindre la longueur ridiculement longue (et impressionnante) de 370 mm. Pour le cuisinier à domicile ou professionnel, nous recommandons un Gyuto mesurant entre 210 mm et 270 mm de long.

À propos de Nigara Hamono - Nigara-san est un fabricant de couteaux relativement nouveau de la préfecture d'Aomori, mais ce n'est pas une nouvelle entreprise. L'entreprise existe depuis plus de 350 ans, remontant à ses ancêtres forgerons. La fabrication de couteaux est une petite partie de ce qu'ils font ; ils produisent également de grandes poutres d'acier et d'autres éléments pour les bâtiments ! Go Yoshizawa, 35 ans, est un jeune forgeron qui est le fils du président de l'entreprise et a décidé de revenir à leurs racines de forgeron. Il fabrique maintenant des couteaux tsuchime uniques et superbes et du Damas plié à la main.
