J'ai toujours aimé les lames comme celle-ci avec une texture martelée « tsuchime » et une finition sombre « kurouchi », car elles montrent l'amour qui a été mis dans la fabrication du couteau et lui donnent un look tellement badass. Cette lame particulière est forgée en acier SLD, qui prend un tranchant incroyable et le conserve très bien, mais n'est pas exigeante en entretien comme certains aciers japonais. Lavez-la simplement à la main et essuyez-la pour éviter la rouille !
Les couteaux Fujimoto sont dotés d'un manche japonais classique, appelé « wa handle », qui concentre la majeure partie du poids du couteau dans la lame. Bien que cela puisse sembler un peu inhabituel pour certains, cette conception permet au couteau de faire plus de travail et est très confortable une fois que vous vous y êtes habitué.

They really liked the 150mm Hatsukokoro Kumokage Honesuki that I had but it's CS not SS, so I found this Fujimoto SLD santoku which seemed to be the only SS knife that had decent thickness (for durability for a first time user) & shared other characteristics. But this knife cuts beautifully, there is no wedging, it feels light in the hand, has good food release, & didn't have any manufacturing imperfections. Plus, it also benefits me that any time I visit will be a sharp knife there."
