"So sharp and light"
"As a bakery we’re been riding a big daddy for a the last ten years or so. The curve in this along is sharpness lets us slice through crust like a lightsaber."
"This knife was recommended to us by staff for cutting through our sourdoughs. It's a sturdy blade that doesn't bend much, which allows us to evenly cut through the crusty loaves. I can cut thin slices of sourdough with it (~0. 5"), and the length is useful for slicing through whole focaccia's. Highly recommended as a budget bread knife!"
"Works great on my bread!"
"Lovely to use, feels good in the hand, sharp."
"I am a semi-pro bread baker and have a bit of a collection of bread knives running the gamut from very cheap to very nice. The Tomita Hamono has great length, but is a little too flexible. You don't want too much stiffness, but in this case it can be hard to get a uniform slice because of how flexible the blade is combined with its length. I'm also not in love with the angle of the off set handle, it's by no means terrible, but not the best I've used. The teeth have great bite and there's been no issue with slipping. It slices very cleanly and without much effort. It does its basic job very well. Ultimately, I like this knife quite a bit, however it's about twice the price as a Tojiro Bread Slicer and I don't think quite as good in performance. The Tojiro is still the best I've used, especially so when factoring price."
