À propos de Shizu Gen - Shizu Hamono est un fabricant de couteaux relativement « nouveau », créé en 1959 à Seki par Masami Horibe, qui a grandi dans la ville de Seki, la ville des forgerons, et est naturellement devenu un artisan. Produire une finition Kuro-uchi stable sur de l'acier inoxydable était un défi, alors ils s'y sont attaqués de front dans le but de produire des couteaux « Real Kuro-uchi » (c'est-à-dire sans revêtement ni teinture) pour atteindre des performances élevées avec une beauté classique et une facilité d'entretien. Après 29 mois de recherche et développement, ils ont finalement trouvé la technique pour créer une véritable finition kuro-uchi sur l'acier inoxydable.

L'acier inoxydable VG10 rend ces couteaux super tranchants, fiables et faciles à entretenir, tandis que les manches en pakkawood sont élégants et robustes.

"Great knife, arrived sharp and has kept its edge well after 6 months of use. Mainly used to do bar prep work (cutting limes, lemons, oranges, jalapenos) full time for a very high volume bar. Take care of it and it will take care of you, everyone who has used it has been amazed by the quality and cut."

Great little knife!

"Went into the garage sale looking for the ko-bunka version of this knife, but found this one. Nice suble damascus finish and very sharp. the D-shape handle takes a little getting used to but comfortable none the less. A testament to its durability, this was a retired and refurbished tester knife and was razor sharp and looked as good as new despite having likely been used and sharpened several times. If the rest of the line ever come back in stock I'll be buying another shape for sure!"
