À propos de la forme - Les Yanagibas sont des couteaux longs, fins, à biseau unique, affûtés et aiguisés d'un seul côté. Traduit par "feuille de saule", ils sont gracieux et élégants comme leur nom l'indique. Les Yanagibas sont couramment utilisés pour trancher le sashimi, mais peuvent également être utilisés pour découper d'autres viandes comme le rôti de bœuf et la côte de bœuf.
À propos de Sakai Takayuki Suigyu Kasumitogi - Sakai Takayuki est réputé comme le plus grand fabricant de couteaux de Sakai. L'entreprise regroupe un grand nombre de forgerons et d'artisans qui collaborent pour créer une vaste gamme de couteaux. Bien que la région de Sakai soit traditionnellement spécialisée dans les lames à biseau unique, Sakai Takayuki fabrique de nombreuses formes différentes.
Le Suigyu Kasumitogi est parfait pour un jeune chef sushi ou un cuisinier amateur souhaitant s'initier au monde du sushi. L'acier au carbone Shirogami (blanc) est vraiment excellent. Il est très facile à aiguiser, prend un tranchant d'une brillance exceptionnelle, coupe comme de la soie et est très robuste pour sa dureté. Il suffit de le garder au sec pour éviter la rouille !

Not essential but I took a 600 grit sandpaper to the handle and treated with mineral oil/beeswax salve and it looks and feels like a much more expensive knife.
