À propos de la forme - Le Bunka est un vrai dur à cuire, comme un couteau de cuisine dans une veste en cuir. C'est un couteau polyvalent qui s'apparente au Santoku. "Bunka" se traduit par "culture". Ce couteau de cuisine polyvalent est idéal pour couper en dés, trancher ou émincer. Comme un santoku, c'est un croisement entre le nakiri et un gyuto, juste un peu plus dur à cuire.
À propos du créateur - Haruki Miyazaki-san est un forgeron de 35 ans des îles Goto dans la préfecture de Nagasaki. Il a décidé de devenir forgeron et apprenti sous Ooba-san à Fukuoka après avoir obtenu son diplôme d'études secondaires, et après 5 ans d'apprentissage, il est retourné dans les îles Goto et a ouvert son propre atelier. Son style de couteau s'appelle "Hakata", qui est un autre nom pour Fukuoka et quand les gens disent Hakata ramen, cela fait référence aux ramen Tonkotsu typiques de Fukuoka.
