À propos de San Etsu Hamono - Les couteaux Kanjo nous viennent de Kanjo Tsukahara chez Sanetsu Hamono, le fabricant de couteaux Mikuri, mais ces petits bijoux ne sont pas votre "damas nickel" classique, ce sont des damas noirs poussés à l'extrême. Les couches sont magnifiquement texturées, la lame est fine et ils sont super légers. Ce sont l'un des affûteurs d'élite de Seki.
À propos de la forme - Inspirés par le profil d'un couteau de chef européen traditionnel et la pointe badass d'un Kiritsuke (traditionnellement un couteau à simple biseau), les Kiritsukes à double biseau sont des couteaux polyvalents avec une légère inclinaison pour la découpe de viande. Si vous voulez un seul couteau pour tout faire et avoir l'air plus cool que votre copain, c'est votre couteau. Pour le cuisinier à domicile ou professionnel, nous recommandons un Kiritsuke mesurant entre 210 mm et 240 mm de long.
