  • Gyuto

Inspired by the profile of a traditional European chef knife, Gyutos are a multi-purpose knife with a slight meat-cutting bias. “Gyuto” translates to “cow sword.” If you want one knife to do it all, This is it.

  • Isamitsu Hamono - Blacksmith

Isamitsu Hamono is primarily operated by Yuki Abe-san and Gaku Kanatsu-san. As makers, they're always striving to craft better knives and improve their methods. Abe-san and Kanatsu-san also break from tradition in many ways, cross-pollinating knowledge with other blacksmiths to form a style totally their own and even taking on a young woman as an apprentice in 2022.
