Né en 1950, le forgeron Hideo Kitaoka est la 3e génération de forgerons de sa famille, perpétuant une tradition qui remonte à 1868. Kitaoka-san est spécialisé dans le forgeage de couteaux à biseau unique et est l'un des seuls forgerons capables de forger ce style à Echizen. Il se concentre sur l'artisanat traditionnel, gardant ses lames relativement simples afin de pouvoir perfectionner chaque étape du processus. Heureusement pour les passionnés de couteaux comme moi, Kitaoka-san a pris deux apprentis pour perpétuer la tradition familiale : son fils Hideharu Kitaoka-san et le jeune Ryuku Nakatani-san.
Comme je l'ai dit, les lames de Kitaoka-san sont très traditionnelles, et c'est pourquoi je les aime tant. Les lames à biseau unique sont rares en Occident, mais elles sont de plus en plus populaires pour une bonne raison : elles sont conçues pour des tâches spécifiques et sont inégalées pour les accomplir. Qu'il s'agisse de couper du poisson avec un deba et un yanagiba ou de délicates garnitures de légumes avec un usuba, les lames Kitaoka vous épateront toujours.

"I've been on the market for a honesuki and when this came up during the garage sale, it hit all the right notes - single bevel, all carbon, and beautiful. Out of the box, it was razor sharpe and I've used it to break down a couple turkeys and some ducks."
"I was looking for my first one bevel knife and needed a boning knife. It's also my first white carbon Steele. I knew it was going to develop a patina but it developed it a lot faster than my Moritaka Ishime. The knife is really really sharp out of the box an perform beautifully. The spine is a bit edgy but it's not bothering me while boning a chicken. Using a single bevel is pretty different than a double bevel and I'll have to improve my technique.
