À propos de Haruyuki Nishiki - Lorsque j'utilise l'expression « acier traditionnel », c'est exactement de cela que je parle. Le Shirogami, connu sous le nom d'acier au carbone blanc en français, rouillera si vous clignez des yeux trop lentement, mais coupe comme quelque chose venu d'une autre dimension. Sérieusement, cela changera votre perception du tranchant. Les concepteurs de ce couteau ont compris que la rouille était un problème, alors ils ont gainé la lame de deux couches extérieures d'acier inoxydable. Dotée d'un élégant manche en bois de cerisier, cette lame est aussi chic que tranchante.

À propos de la forme - Inspirés du profil d'un couteau de chef européen traditionnel, les Gyutos sont des couteaux polyvalents ayant une légère inclinaison pour la découpe de la viande. « Gyuto » se traduit par « épée de vache ». Si vous voulez un seul couteau pour tout faire, c'est celui-ci. Commençant à 180 mm, les Gyutos peuvent atteindre la longueur ridiculement longue (et impressionnante) de 370 mm. Pour le cuisinier à domicile ou professionnel, nous recommandons un Gyuto mesurant entre 210 mm et 270 mm de long.
