À propos de Teruyasu Fujiwara -Fujiwara est l'un des noms les plus vénérés dans le monde des couteaux japonais. La famille Fujiwara a commencé comme forgerons en 1870, forgeant d'abord des outils agricoles, puis des épées. De nos jours, de nombreux forgerons fabriquent une lame avec un noyau en acier au carbone laminé avec une couche extérieure d'acier inoxydable pour un couteau haute performance nécessitant moins d'entretien ; ce forgeron a été l'un des premiers à développer cette technique.
Cette lame est fabriquée en acier Shirogami, appelé « acier blanc » en anglais, et bien qu'elle nécessite des soins pour éviter la rouille, elle est plus tranchante que presque tous les autres aciers à couteaux. La finition brute « nashiji » est inspirée de la peau d'une poire asiatique et met en valeur le travail acharné et le soin apportés à la fabrication de ses couteaux.

À propos de la forme - Inspirés par le profil d'un couteau de chef européen traditionnel, les Gyutos sont des couteaux polyvalents avec une légère inclinaison vers la découpe de viande. « Gyuto » se traduit par « épée de vache ». Si vous voulez un seul couteau pour tout faire, c'est celui-ci. Commençant à 180 mm, les Gyutos peuvent atteindre la longueur ridiculement longue (et impressionnante) de 370 mm. Pour le cuisinier amateur ou professionnel, nous recommandons un Gyuto d'une longueur comprise entre 210 mm et 270 mm.

"The Fujiwara Nashiji is my first standless clad carbon steel knife, the blade is razor sharp, sharper than expected. It was recommended by Knifewear as I was looking for something a bit shorter than my 210mm Masashi Shiroshu. This knife is the perfect length and feels amazing in hand, hard to describe in words, you'll have to give it a try. The knife is a bit more rustic on fit and finish and the length will be +/- 195mm but that's what gives it character. Lastly, for those who think you need to purchase the Maboroshi or Denka lines if you're going to go with Fujiwara, you don't, give the Nashiji a try, you won't regret it. Thanks Francis for the recommendation!"
"First - The team at Knifewear in Ottawa were amazingly helpful and friendly, as always! Second - the knife... I LOVE the blade. Razor sharp, nicely weighted, and beautifully smithed. The handle? Well, the handle does NOT compare to the magnificent blade. Fujiwara Nashiji’s talent is clearly spent on the steel and not the woodwork. As this is a gift that will travel all the way to Tasmania, I will investigate a new handle that will match the high quality of the steel. Thanks Knifewear Team for helping me find a great blade! "Upon inspection of the knife that was send to me, I have noticed that on this knife there is a gap between the collar and the handle, the handle was gray and I had to sand it up to get it clean, nashji is poorly executed and I can put a better edge on the two Masahiro knifes (a true work horses of the kitchen) that I have, than the edge on the knife I have received. To anybody who will say “but it is a Fujiwara” I will say, the quality is in the attention to detail."
