Gyutos range from 150mm to 360mm, with 210mm being the sweet spot for most cooks.

Not sure which size to pick? Start with 210mm — it's the most versatile length for both home cooks and professionals. If you have larger hands or work with big cuts of meat, step up to 240mm. Go shorter only if you're coming from a smaller knife and want a familiar feel.
