L'extrémité la plus épaisse maintient les gyutos, les santokus et les nakiris plus grands à environ 15 degrés, tandis que le côté étroit fonctionne bien pour les pettys et autres petits couteaux. Q&A

What angle does the narrow side sharpen to?
Hey, The clip is designed to sharpen at a 15 degree angle on both sides. There is a wider opening on one side to accommodate the thicker spine on taller blades (gyuto, nakriri etc.) and a more narrow opening on the other so that your blades with thinner spines fit snugly (petty etc.). If you put a taller blade in the narrow opening the angle will vary based on the height of the blade but it'll be under 10 degrees.
Does it matter which side of the clip you use? Do they have different angles?
It does matter - the big side of the clip is for big knives like a chef's knife or gyuto, and the small side is designed for smaller knife like a paring or petty.
