Stainless steel is super handy because it doesn’t rust or stain easily like carbon steel. That said, remember it is stain-less, not stain-never. While it is much easier to care for than high-carbon steel, it does benefit from proper use: use it, wash it, dry it and put it away. Always avoid the dishwasher!

USE

• Only cut food you can bite through with this knife. Hard foods can chip the blade. No olive pits, bones,  lobster shells, woody stems or parmesan rinds. Cutting frozen food is especially bad  because the cold will make hard steel even more brittle. If you wouldn’t chew it with  your own teeth, don’t cut it.

• Your cutting surface is the biggest culprit of dulling your knife. Use wood. End  grain wood is especially good. Plastic can be fine too, but certainly not glass,  granite or bamboo

• The edge of your knife works best sliding forwards or backwards. Scraping the  knife edge sideways will dull or damage the edge. Instead, use the spine of the knife to move foods across the cutting board. Do not twist the edge or pry with the edge, this is the worst screwdriver you ever bought and these motions will certainly  damage the edge. Listen to the knife! If you can hear the edge making a “tink”  sound on the cutting board, change what you are doing.

CLEANING

• After use, wash the knife by hand with regular dish soap, rinse with hot water  and dry by hand immediately. Dishwashers are very bad for knives.

• Wood handles may dry out over time and exposure to water. Simply treat them  with some food safe wax.

STORING

• Protect the edge for your safety and to avoid edge damage. A simple blade cover  will do the trick if you keep knives in a drawer or in a travel case.

• The convenient wall magnet made with wood is a great way to show off your knives.  Be sure to put it back spine first, then roll it onto the blade face. This will keep the  edge from contacting the wood first.

• The good ol’ counter top block can keep knives at the ready and protected, so  can drawer inserts. Whatever the method, it should keep the edge from touching  anything else.

Fits small hands, great entry-level option

"A fantastic knife for a first foray into Japanese knives. Super sharp out of the box and a joy to use. Works well for small hands. Staff at the store were super friendly and helpful when I went to pick it up as well."

Cleanest Cut

"Got this for my mother for Christmas. My brother decided to try it out on his arm hair, cut them off in one slice. He’s done this with other knives before, he’s said this never cut so cleanly before. We cleaned it off afterwards and it cuts watermelons just as good. And for the price it’s awesome."

We ordered our knives almost

"We ordered our knives almost 3 weeks ago as Christmas gifts. Still have not received. Purolator issues. Product is great but delivery poor. Knives are of no use if you don't get them. Have called for help - all we get is apologies from both Knifewear and Purolator. Unfortunate."

Ann K. (5/5)

So so so so good

"Man I love this knife. I don't really know much about them but as an entry point this is perfect. I wish the sheath came free with it though."

Tim F. (5/5)

Really good quality for the price

"I was considering the tojiro DP for quite awhile and the tojiro basic being released was exciting because it has many of the same great characteristics as the tojiro dp at an even better price. After a few months of using this thing, I still love it. The thin blade, sharpness out of the box, and handle quality are all a huge upgrade to my past stainless steel knives."

Q&A

Further to my question below - please restock them, they are such a good deal! Especially for gift.
Hi John, thanks for getting in touch! We got these in as trial to see how we like them/folks like them, and it seems people are thrilled with them, for price, but also performance. We'll have them back, just not sure when! If you add yourself to the back in stock list, you'll know when we do! - Ellie
Will you restock the Basic line, like the 210mm Gyuto? Thanks!
Hey John, we don't have a ETA on them currently, we got them as a trial to see if we want to carry them, I'm sure they'll be back, just not sure when! - Ellie
How is the Basic line so cheap, and still use VG10? Bargain of the century 👍
Hey Nick, they are a crazy deal. It is still VG10, cheaper handle, not has much fit and finish. They come in a really nice box though. The Classic/DP feels better in the hand, but for almost half the price the Basic gets it done. - Ellie
