À propos de la forme - Inspirés par le profil d'un couteau de chef européen traditionnel, les Gyuto sont des couteaux polyvalents avec une légère inclinaison vers la découpe de viande. « Gyuto » se traduit par « épée de vache ». Si vous voulez un couteau pour tout faire, c'est celui-ci. Commençant à 180 mm, les Gyuto peuvent atteindre la longueur ridiculement longue (et impressionnante) de 370 mm. Pour le cuisinier à domicile ou professionnel, nous recommandons un Gyuto d'une longueur comprise entre 210 mm et 270 mm.
À propos de Takeshi Saji -Originaire du village de couteaux de Takefu, Takeshi Saji a commencé à apprendre le travail de la forge auprès de son père en 1966. Successeur à part entière de son père maître à l'âge de 30 ans, il est un forgeron de troisième génération dans sa famille. Il s'efforce continuellement de forger une meilleure lame. Tous les couteaux Masakage sont fabriqués à la main au Japon par des forgerons choisis pour leur excellence. Shibata-san, le meilleur aiguiseur de couteaux d'Hiroshima, sélectionne et conçoit ces couteaux. Tous les couteaux Masakage sont aiguisés à la main par Shibata-san avec sa technique unique d'utilisation d'un grain différent de chaque côté de la lame. "This knife is awesome, both visually, and performance wise. The edge retention is unreal, and it performs like a carbon steel knife, but feels significantly less delicate. Only downsides are 1. If your cutting style makes heavy use of a guide finger, the texture on the outside will start to shred your guide knuckle after 1-2 hours of cutting 2. Spine is very angular, no rounding which makes holding it for long periods a little uncomfortable. Overall, the downsides are nowhere near enough to stop me from using it, it's mostly my daily driver, but for any bulk "fine" work i'd avoid it."
