À propos de la forme : Un Nakiri est un couteau à légumes. Sous-utilisée dans les cuisines occidentales, la lame plate du Nakiri est conçue pour hacher les légumes par des mouvements de va-et-vient. Puisque tout le tranchant plat du couteau touche la planche à découper en même temps, vous ne transformerez pas le légume en accordéon. Les légumes en accordéon sont toujours connectés comme une poupée en papier après que vous ayez "fini" de les couper. Pour vraiment comprendre la génialité d'un Nakiri, nous vous recommandons de préparer une soupe à l'oignon dès votre première nuit avec le couteau. La facilité de hachage vous surprendra.
À propos du forgeron : Les couteaux de Shosui Takeda déchirent, c'est aussi simple que ça. Maître forgeron de troisième génération, Takeda-san est né et a grandi à Niimi, Okayama, au Japon. Après avoir obtenu son diplôme universitaire à Tokyo, il est retourné dans sa ville natale pour succéder à son père en tant que maître forgeron pour Takeda Hamono. Depuis 1985, il s'efforce de produire les meilleures lames et outils forgés à la main. Chaque lame est une œuvre d'art unique et possède une certaine présence. Forger des couteaux, des haches, des hachettes, des serpes et des faux, rien ne semble impossible pour Takeda-san.

"Definitely something different compared the rest of my collection—tall, nimble/lightweight, sharpens up like a dream too. A little too much belly for my liking, wish it was a flatter profile, so if you’re looking for an straight traditional nakiri, this is not it. Epoxy handle is overboard, but a Takeda signature I guess, doesn’t bother me, but might bother you if you don’t like the stock handle. Would recommend everyone have at least one Takeda in their collection, an absolute joy to cut with! AS stainless clad, super easy to maintain, and it forms a beautiful patina."
