À propos du Tadafusa Nashiji - Le couteau occidental Tadafusa Nashiji est doté d'un noyau Aogami No.2 et d'une finition nashiji en acier inoxydable sur un manche occidental en bois incurvé, ce qui en fait une excellente combinaison. Pour nous, c'est un couteau classique que nous voyons quelques fois par an, et nous sommes toujours ravis de l'avoir dans nos magasins.
Tadafusa est dirigée par Tadayuki Sone — son grand-père, Torasaburo Sone, a fondé Tadafusa à Sanjo en 1948. Sanjo est un épicentre de la forge depuis plusieurs centaines d'années, et c'est aussi le berceau de certaines des distilleries de saké et des stations de sports d'hiver les plus réputées.
Sans surprise, Sone-san a un très fort sentiment de fierté civique. Il s'est donné pour mission de maintenir toute sa production à Sanjo afin de créer des opportunités d'emploi locales. Cela ne s'étend pas seulement à sa génération ; Sone-san souhaite que Tadafusa reste à Sanjo afin que la prochaine génération puisse hériter de cette tradition et améliorer son artisanat.
En tant que président et forgeron en chef, Sone-san dirige une équipe de forgerons hautement qualifiés qui produisent des lames abordables et forgées à la main sans jamais compromettre la qualité.
À propos de la forme - Inspirés du profil d'un couteau de chef européen traditionnel, les Gyutos sont des couteaux polyvalents avec une légère préférence pour la découpe de la viande. "Gyuto" se traduit par "épée de vache". Si vous voulez un couteau pour tout faire, c'est celui-ci. Commençant à 180mm, les Gyutos peuvent atteindre la longueur ridiculement longue (et impressionnante) de 370mm. Pour le cuisinier à domicile ou professionnel, nous recommandons un Gyuto dont la longueur est comprise entre 210mm et 270mm.

"What an awesome knife. I hesitated because of the western handle, but it was only my preconceived notions of what a Japanese knife “should” be. But I’ll be the first to admit I was wrong.
