À propos de la forme - Inspirés du profil d'un couteau de chef européen traditionnel, les Gyutos sont des couteaux polyvalents avec une légère tendance à la découpe de viande. « Gyuto » se traduit par « épée de vache ». Si vous voulez un seul couteau pour tout faire, c'est celui-ci. Commençant à 180 mm, les Gyutos peuvent atteindre la longueur ridiculement longue (et impressionnante) de 370 mm. Pour le cuisinier à domicile ou professionnel, nous recommandons un Gyuto mesurant entre 210 mm et 270 mm de long.
À propos de Shizu Gen - Shizu Hamono est un fabricant de couteaux relativement « nouveau », créé en 1959 à Seki par Masami Horibe, qui a grandi dans la ville de Seki, la ville des forgerons, et est naturellement devenu un artisan. La production d'une finition Kuro-uchi stable sur l'acier inoxydable était difficile, alors ils l'ont abordée de front dans le but de produire des couteaux « Real Kuro-uchi » (c'est-à-dire sans revêtement ni teinture) pour atteindre des performances élevées avec une beauté classique et une facilité d'entretien. Après 29 mois de recherche et développement, ils ont finalement trouvé la technique pour créer une véritable finition kuro-uchi sur l'acier inoxydable.
L'acier inoxydable VG10 rend ces couteaux super tranchants, fiables et faciles à entretenir, tandis que les manches en pakkawood sont élégants et robustes.

"I decided to treat myself to a new knife after 25 years with German steel. I absolutely love my Shizu. Although the handle is offset slightly (designed for a righthanded user and I'm a lefty), I actually find the bevel lines up really nicely with my thumb. The difference in performance is noteworthy. My Shizu slides through everything like 'butta, and doesn't leave me with accordionated spring onions (pet peeve on my old knife). The only thing I needed to get used to, and it's minor, is that the heel is a razor point. that's not a flaw, just requires some more attention"
