First, it is remarkable sharp so it peels easily and cleanly. Second, the curve follows the natural contours of vegetables much better so there is significantly less waste. Even peeling a parsnip, for example, instead of 14 strokes to cover the entire circumference, it takes only 10 with thinner slices removed. Multiply that by a dozen and it saves time and waste."

Sharpie!

"Super sharp. The angle is very shallow so it removes a thinner strip than other peelers. Good if that is what you are looking for but not if you wanted to make heftier shavings like for vegetable noodles. Peeling thicker skins may take more than one pass. Slightly curved shape works nicely for round produce but for larger produce means edges can gouge so should buy the wider version from the same brand. Stainless means lower maintenance."
