À propos de la forme : Le Honesuki est un couteau à désosser de style japonais. Initialement conçu pour la volaille et les petits animaux comme les lapins, il excelle également dans les travaux de boucherie et de filetage de poissons beaucoup plus importants. Il a un talon relativement épais pour racler la viande des os et une pointe plus fine pour des coupes précises. Il ne faut pas forcer ce couteau à travers l'os, mais il est parfait pour couper le cartilage et les tendons.
Ce couteau présente un léger biais droitier le long du fil. Il peut toujours être utilisé par les gauchers et être affûté avec un biais gaucher.

"This knife falls through chicken, duck, and fish. The robust heel and fine-ish point over the relatively short length make for such a versatile breakdown tool. Does well as a carver/slicer for cooked fowl as well. The SK4 is quite reactive and mine is developing a patina surprisingly quickly. The factory edge was fine right out of the box."
