À propos de Masakage Yuki -
Lorsque vous prendrez le Yuki, vous remarquerez immédiatement sa légèreté. L'acier est martelé plus finement que celui d'un couteau ordinaire, ce qui lui permet de trancher facilement les légumes denses. Le Shirogami, ou « carbone blanc » en français, est un acier très traditionnel prisé des forgerons et des passionnés de couteaux pour sa grande tenue de coupe et son tranchant légendaire. Les couteaux Yuki sont revêtus d'acier inoxydable plus doux, de sorte que seul le tranchant doit être maintenu au sec pour éviter la rouille. Cette gamme est l'une de nos plus populaires et souvent une porte d'entrée dans le monde des couteaux forgés à la main.
Le nom Yuki (qui signifie « neige » en japonais) vient de la finition « nashiji », ou « peau de poire », qui lui donne un aspect givré.
Yoshimi Kato est le gendre et successeur de Hiroshi Kato, l'un des fondateurs du Takefu Knife Village. La transition d'apprenti à maître forgeron et chef d'entreprise s'est déroulée sans accroc pour Yoshimi-san. Il me dit qu'il s'efforce d'améliorer continuellement ses compétences jour après jour, et j'ai hâte de travailler avec la prochaine génération de Kato pour les décennies à venir!
Yoshimi-san est un homme calme, qui avance sereinement à un rythme régulier et s'exprime davantage par ses couteaux que par ses mots. Et, oh, qu'ils parlent! Les couteaux de Yoshimi-san comptent parmi les lames les plus magnifiques et les plus précises que j'aie jamais manipulées.
À propos de la forme - « Sujihiki » se traduit par « trancheur de chair » et fait exactement ce que son nom suggère, parfait pour découper et trancher les rôtis, la dinde, les viandes crues, le poisson et toutes les autres protéines, et la longueur de la lame étendue permet de trancher d'un seul long mouvement, au lieu de faire glisser le couteau d'avant en arrière dans un mouvement de scie. Réaliser des tranches nettes de brisket ou des applications ultra-fines comme le Carpaccio devient un jeu d'enfant.

"This knife is amazingly sharp, gliding through anything I put in front of it. The handle is comfortable, attractive and fits my hand well. As carbon steel clad in stainless it does take care not common with European knives, this however is a pleasure rather than inconvenience. For its price point it is hard to beat."
"The Yuki line has always called to me but I could never justify buying one; however, I finally decided to pull the trigger on the 300 mm sujihiki and I sure am glad that I did. This knife is beautiful, thin behind the edge and the tip is almost too thin. Slices very well. Handle is a bit unfinished feeling but nothing that can't be fixed.
