Fujimoto Santoku
"I’ve only recently begun using Japanese knives. When I first went to Knifewear to get a different knife sharpened I walked around the shop, and asked if I were to get a single knife to start which would it be. The employee said this one. It feels nice and solid. I’ve found I prefer more rustic and larger solid wa handles over anything round or western and light weight. The blade is fairly sharp and a tad on the thicker side but that’s also what I’ve found I prefer. At this point I now have another 2 Fujimotos of the same line, the Gyuto and petty. Both also great. I have a Nakiri and bunka from different lines to get some more variety. Anyway, once you start, you get hooked. This is a good place to start. Likely will have this forever."
