The kitchen knife makers steel of the moment made by Takefu special steel. VG10 steel is strong, hard, stainless, corrosion-resistant and relatively easy to sharpen.
It is generally forge-welded within softer stainless steel and tempered to 60–61 Rockwell. More and more manufacturers are using VG10 steel for their knife blades because of its user-friendliness.
