About Hazaki Knives - Hazaki, founded by Samuel Bouchard in Montreal, Canada, combines the best of both worlds: Japanese knifemaking and Canadian woodwork. Blades are expertly forged in Seki, Japan, from high-end Japanese steel and finished with beautiful handles in Montreal by Samuel and his team. Their knife blocks and magnets are expertly handcrafted in Canada from sustainably sourced woods.
I’m a sucker for a pretty blade, and this damascus steel is such a delight. On top of that, the whole line has badass kiritsuke tips and gorgeous dark walnut handles - I’m in love. While a pretty knife never fails to get me inspired in the kitchen, a knife needs to cut as well as it looks. Lucky for you and I, this blade is wicked sharp. Hazaki has used VG10 stainless steel, which keeps a brilliant edge but doesn’t require a ton of maintenance.
Hazaki prefers the natural look and feel of the Canadian wood used in their handles, so they are not sealed. I recommend a light coat of cutting board wax every few months to keep them looking and feeling great!
About the Shape - Inspired by the profile of a traditional European chef knife, Gyutos are a multi purpose knife with a slight meat cutting bias. “Gyuto” translates to “cow sword.” If you want one knife to do it all, This is it. Starting at 180mm, Gyutos can reach the ridiculously long (and awesome) 370mm. For the at-home or professional cook, we recommend a Gyuto which measures between 210mm and 270mm long.

"Performs well in a professional setting during dinner service. Excellent knife for a budget"
"Would highly recomend this knife. Unstoppable!"
"First time ordering from knitwear. Extremely happy with the product being as advertised and showing up super fast! (shipping from 4 provinces over. ) Extremely comfortable and ergonomic to use. Love the shape of the blade for an overall great all purpose Kitchen knife. Will definitely be ordering from here next time and recommending as well."
"Looks great, feels very nice in the hand. It came razor sharp and I enjoyed making super fine slices of my home grown habañeros. Let's see how it holds up in my busy kitchen, I plan on taking good care of it."
"great knife for the $$$, comfortable in the hand, cool/unique blade shape - i love knifewear"
"Made well and comes sharpened ready to use. Overall a great and sturdy knife!"
"It's very sharp. Some of the blade texturing gets a little too close to the blade. The shape of it is easy to use and feels safer."
"The knife was a gift so I can't give a proper review. But it's a really stunning knife and will be used with love 😊"
"This knife is not only beautiful, but the difference in texture between the edge and body of the blade allows you to develop an inherent sense for the knife when using a diagonal cutting motion. Roll cutting also functions, but I wouldn’t buy this knife if that is your preferred method. Edge has been holding up well, and it is by far my favourite knife I have owned to date. I also think the size is perfect for larger vegetables and processing meats, which is the bulk of my use for it."
