Haruyuki Nishiki Petty 135mm
Haruyuki Nishiki Petty 135mm
About the Shape - This is the knife for smaller jobs that are done on a cutting board. Perfect for slicing shallots, cutting herbs, and boning smaller proteins. Additionally, Petty knives are an indispensable tool for those who feel uncomfortable wielding a larger chef knife.
About Haruyuki Nishiki - The perfect entry-level knife for anyone wanted to dip their toes into the carbon steel pool. High performance Shirogami #2 gets blazingly sharp, but rusts quickly, so the knife has been clad in a protected layer of stainless steel. The blade cuts beautifully, but you only need to worry about keeping the very edge dry! The name, Nishiki, comes from the dimpled 'tsuchime' pattern on the blade, which reminds us of the rice used to brew sake (Nishiki).
