High performance Shirogami #2 gets blazingly sharp, but rusts quickly, so the knife has been clad in a protected layer of stainless steel. The blade cuts beautifully, but you only need to worry about keeping the very edge dry! The name, Nishiki, comes from the dimpled 'tsuchime' pattern on the blade, which reminds us of the rice used to brew sake (Nishiki).
