About the shape - Inspired by the profile of a traditional European chef knife and a badass tip of a Kiritsuke (Traditionally a single bevel knife), double bevel Kiritsukes are a multi-purpose knife with a slight meat cutting bias. About Hatsukokoro Saihyo - The Saihyo (translates as "Diamond Dust") knife line from Hatsukokoro is a testament to precision. Hatsukokoro teamed up with a very skilled knifemaker in Seki, Japan to produce this line of knives. These laser thin knives are finished with a dazzling suminagashi Damascus finish wrapped about an SG2 stainless steel core and fitted with a wenge wood octagon handle.
