Nakiri (Veggie!) Knives
The Nakiri might look like an unusual design to those not used to Japanese knives, it often ends up as their favorite knife; after a bit of practice. While it looks like a butcher’s cleaver, the tall blade design is meant for ease of prepping veggies. The extra bit of height allows the knife to clear through starchier vegetables effortlessly, while the flat bottom edge ensures the cook cuts all the way through, avoiding what we call "accordion veggies".
