About Shibata Koutetsu Chromax - Koutetsu are known for being the crazy thin, high-performance laser from master sharpener Shibata-san.This series, made from Chromax, a phenomenal semi-stainless steel favoured by blacksmiths for how well it can be sharpened and its edge retention. As a semi-stainless, it’ll patina pretty quickly, but the step between patina and rust is big enough that it’s pretty easy to care for.
About the Shape - This is also a multi purpose knife, but with a slight vegetable bias. Santoku means 'Three Virtues' or 'To solve Three Problems'. The virtues or problems are slicing, dicing and mincing. Santoku is usually found in 160mm - 190mm lengths. These are more and more popular in Western kitchens due to the unique shape and smaller easy to handle size.

"This thing is the real deal. Nearly as thin as my Kobayashi, with an incredibly toothy edge. Incredibly light as well."
"I have used this wonderful Bunka knife prepared almost all types of vegetables and herbs different types of cut and chop for a week. Initially its weight and balance is perfect. Very light and thin blade helps you to cut vegetables more efficiently and easily without overwhelm your wrist and elbow without ruining freshness of vegetables and herbs different types. Easy to maintain and clean. The beautiful shape of octagon handle is comfortable to grip for a long period of time. The blade has almost no angle it’s almost flat, so if you use knife up and down motions it fits for you, but there is limited pushing and pulling movement. I found that this knife is designed best for delicate performance to cut and slice for such as tomatoes, onions, root vegetables, herbs; however, little bit trouble to cut high fibre vegetables such as celery or less condensed leaves like Romaine. I tried to cut some cabbage there is no issue. Overall I satisfied this Bunka shape Santoku knife and recommend to professional or enthusiast than household."
