About Sakai Takayuki Grand Chef Seigaiha - The western style Seigaiha line all feature kiritsuke tip, thin blades and an eye catching “Blue Wave damascus”. It is made from Boehler Swedish steel, the same steel they have been using for their other grand chef lines. They can take a super keen edge and are easy to sharpen and hold a pretty good edge for a good amount of time. A great knife for at home or professional kitchen.

A note about measurements: Knife edge length is shorter than stated, as Sakai knives are measured from the front of the handle to the tip. Additionally, some knives feature a small 'machi' gap between the handle and blade.
