About the Mitsobushi Nagomi - Mitsuboshi strives to produce well-crafted and affordable knives that combine modern aesthetics with superior cutting performance and ergonomic comfort for every user. The Nagomi combines 440A Stainless steel with a unique western handle that fits right in your hand.
Mitsubishi knife-making process involves 5 meticulous steps in order to ensure a high-quality blade that will perform year after year. They partner with 5 different companies in Gifu Prefecture, Japan, to help us make their knives. Each company plays a critical role in the creation of each knife, and every craftsman is proud to carry on the ancient craft of swordmaking and knifemaking like their forefathers before them.
Based in Seki City, Gifu Prefecture, Mitsuboshi Cutlery has been perfecting the art of high-quality knife manufacturing since 1873.
About the Shape - Inspired by the profile of a traditional European chef knife, Gyutos are a multi purpose knife with a slight meat cutting bias. “Gyuto” translates to “cow sword.” If you want one knife to do it all, This is it. Starting at 180mm, Gyutos can reach the ridiculously long (and awesome) 370mm. For the at-home or professional cook, we recommend a Gyuto which measures between 210mm and 270mm long.
