About ICHIGO ICHIE - As a knife brand, Ichigo Ichie has two halves: Ichigo, meaning lifetime, and Ichie, one-time encounter. Ichigo are knives that we expect will stick around for years, that you can slowly build a set from or return to favourites to get gifts for loved ones. Ichie are knives that we love dearly, but may not stick around in our shops forever. Like a bag of excellent tea or a fine bottle of whiskey, we’ll savour them while they’re around.
About the Shape - The Honesuki is a Japanese style boning knife. Originally designed for poultry and small animals like rabbit, it excels for many larger butchering and fish filleting work. It has a relatively thick heel for scraping meat from bones, and a thinner tip for precise cuts. You don't want to force this knife through bone, but it's perfect for cutting through cartilage and tendons.

"I have been trying to get info on care of this knife, have interfaced with your bot and he stated he will e mail the results, this is a gift and I want to make sure the person receiving the gift knows it limits as well how to hone the knife. I also want you yo know that I love the knives you have sold me and that I have gifted to the men in our family. They treasure them and they actually hide them from their wives."
