Toronto-based Steve Cornelsen is heavily inspired by the techniques and artistry of Japanese knife makers, yet has developed a knife style completely his own and distinctly Canadian. These are made of 125Cr1 carbon steel hardened to 63-64 Rockwell. In plain English, they get wicked sharp and hold an edge extremely well.
