The thicker end holds larger gyutos, santokus, and nakiris at roughly 15 degrees, while the narrow side works well for pettys and other small knives. The ceramic angle guide stands up well to abrasive stones and allows you to focus on refining your edge without distractions.

• Excellent for Japanese knives. If used on western blades, it will create a thinner edge that will dull quickly. 
• Only for double-bevel blades like gyutos, santokus, nakiris, and petties. Do not use for single bevel yanagibas, usubas, or debas.
• The thinner side can be used for taller blades to create an extremely fine edge.
