AUS-8 Stainless Steel

AUS-8 doesn't get as hard as some Japanese steels, but that makes it tougher and less likely to get damaged. It still stays sharp a good amount of time, though! This steel is also quite corrosion resistant. It's a great choice for a gift knife or workhorse in a professional kitchen.
