Vancouver chef Dan Ewart became pasta obsessed while working at Savio Volpe - an Italian spot in Van, and easily one of Canada's best restaurants. The obsession took over his workshop in Coquitlam, and he started making traditional pasta gear from sustainably sourced woods. The cloth satchels are made by his mom.
