Miso Fermentation Workshop @ Knifewear Ottawa
Join us on Saturday April 11 at 2PM for a hands-on deep dive into the world of Miso and Koji-based fermentation, where traditional Japanese technique meets modern cooking. In this immersive workshop, you’ll learn how to make your own batch of Chickpea Miso from scratch - and take it home to ferment and enjoy over time.
Led by fermentation educator and friend of the shop Jonah Greenbaum-Shinder, the class will explore how Koji and time unlock Umami. Discussion and tastings will go beyond Miso into the broader world of Shoyu, Amino Sauces, and other fermented staples.
