Shirogami (white) carbon is pretty darn great- super easy to sharpen, takes a brilliantly sharp edge, cuts like silk and is very ruggedfor its hardness. The extremely hard white carbon steel core is laminated between softer layers of carbon steel. Since the blade is not stainless it requires a bit more care.
Fujimoto knives are all hand-forged by master craftsmen in the city of Sanjo. Each craftsman has a specific skill, so their knives are made in a more practical production environment. This means that Fujimoto knives are some of the most technically consistent, reliable and affordable hand-crafted blades that you can buy. They have all of the benefits and romance of a hand-crafted knife, with the perfection of someone who has been mastering a single skillset for years, if not decades.
We called the finish of this knife “Kurochi-Forged” because it has a great freshly forged look from the hammer-marks and oxidized surface. The handle is made of solid oak wood in a comfortable octagon shape. One-piece handles are uncommon in Japan, but becoming more popular. We think they look super slick. The knife has a very light feel overall, and forward balance. The kanji on the knife blade藤本reads “Fujimoto”.
