AUS-8 Stainless Steel

AUS-8 doesn't get as hard as some Japanese steels, but that makes it tougher and less likely to get damaged. It still stays sharp a good amount of time, though! This steel is also quite corrosion resistant. It's a great choice for a gift knife or workhorse in a professional kitchen. 

Steel Composition -  Carbon (C) 0.7–0.8%, Silicon (Si) <= 0.8%, Manganese (Mn) <=0.5%, Nickel (Ni) <=0.3, Chromium (Cr) 13–14.5%, Molybdenum (Mo) 0.1–0.3%, Vanadium (V) 0.1–0.25%
