About Masashi Kuroshu

The core of the blade is made from hard SLD steel and is clad in softer stainless steel. SLD contains 1.5% carbon for an HRC of 63–64, as well as 11–13% chromium for stain resistance. Through a special heat-treating process, Masashi-san is able to get SLD incredibly hard, giving it edge retention on par with high-end carbon steel. Despite the stainless steel nature, you’ll still want to dry it off after each use. 

The handle is made of burnt chestnut wood with a water buffalo horn collar and is an oval shape giving optimal comfort to the right and left-handed alike. 

The kanji on the knife blade “聖作” means “Masashi Saku” or “made by Masashi”.

Posted @withrepost • @naotokw Tonight's Dinner: Fish/shrimp Taco with Asian slaw. Asian slaw is made with Taiwanese Cabbage, Red onion, carrot, cucumber and cilantro all finely julliened. Dressing is made with fish sauce, lime juice, soy sauce, rice vinegar, honey, sesame oil and chopped chilli. Topped with fried onion 😋 Fish is p anko breaded flounder and panko breaded shrimp. More love for the Masashi Kuroshu from our man @naotokw ! What a knife!!!Posted @withrepost • @naotokw Tonight's dinner: Okonomiyaki Kansai style Sliced bunch of cabbage and green onion. Sliced pork belly pretty thin with kuroshu Gyuto by @masashi_crazy_blacksmith. I grated lotus root to add to the batter (flour, egg, water, dashi powder mixture) to give lightness. I usually use long taro root, but couldn't find one. Long enough to know that this knife is NOT your ordinary knife; it is a gift. Every time I pick it up becomes a special occasion. I know that 'Santoku’ means ‘Three Virtues’, but this one has a 4th virtue. Fits my hand like a second skin. Slides through whatever it is cutting (have a few more nicks in my maple cutting board!), and brings a smile to my face whenever I use it.

Chris at the Ottawa shop is really into the Masashi Kuroshu 240mm gyuto. And who could blame him?
