Want to make the most of your chicken?
"The Knifewear Chicken Butchery Class is a fun, relaxing and educational experience. The small group in the back store is well-organized, with everything you need (bowls, large ziplock bags and an impressive selection of Honesuki knives to try) right at your fingertips. In less than two hours, you’ll have two chickens cut, deboned and ready for frying or for making simple skewers. The only downside? You’ll definitely want to take the Yakitori Class! 😂 Thanks! Chicken butchery class in Ottawa
"Good fundamentals, but missing promised yakitori content. Would love to see an advanced versions one day or other things to butcher like fish or lamb that would be fun. I took the chicken butchery class expecting to learn how to break down a chicken specifically for both buttermilk fried chicken & yakitori, as described in the class overview. While the class was well run once it got going, the instructor (yukari) was excellent knowledgeable, patient & great to learn from the actual content focused almost entirely on butchery for buttermilk fried chicken. Yakitori was only briefly mentioned & aside from identifying the chicken oyster, we didn’t really go into any of the traditional yakitori cuts or techniques. The class description explicitly states that we would be breaking down the birds in preparation for yakitori. I was hoping to learn about additional yakitori-specific cuts and how a honesuki is used for that style of breakdown, but that portion never really happened. That being said, it was worth the experence! It covers how to break down a full chicken into 8 pieces - two breasts, two thighs, two wings & two legs. It doesn't cover cooking prep (although they do provide some recipes), just the knife techniques involved identifying, subdividing, and separating the specific portions for use in cooking. Small classes (it was 4 people when I did it) the instructor is clear and coherent, she took her time even working with us one on one. If learning proper kitchen techniques for personal prep is something youre interested in, I'm confident this is something you will enjoy, makes a great gift too. For less than 150$ (because i had a coupon code) is a great deal for what youre getting - A 75$ dollar gift card. 2 (happy & yummy) local sorced whole chickens (which i ate both when i got home) A % of 10 off towards a knife or other included products in store if im correct. & most important, learning the skills & confidence in the kitchen so i dont have to live off uber eats, skip the dish & door dash anymore! Great Class and Great Value
"I bought my husband this class as an anniversary gift and he really enjoyed it. The class was small and the teacher, Robert, was great and was able to answer all of his questions. My husband - who loves cooking - came away from it more confident in his knife skills. The class is also great value, as you get to take the chicken home, and get both a credit and a discount on a knife purchase with it. They did not try to upsell us on the knife either, and my husband enjoyed it enough to look into other classes there."

Great time learning some new skills
"I took the chicken butchery class last weekend and had a great time. Heard some funny stories, had lots of laughs and learned some new skills. Looking forward to never having to pay for boneless chicken again. Also added a new Masashi VS1 Kaijin to round out my collection."

Just what I needed
"I was in Ottawa for a couple months working long hours on a difficult personal matter and this class was just what I needed. Short but packed with useful information and guidance on technique from good instructors. The staff were all so friendly and knowledgeable. I enjoyed the Ottawa Knifewear classes so much, I took all three available within a couple months."
