
How to Use a Mandoline Slicer Safely
I know what you're thinking: "Mandolines are dangerous!" You’ve seen them in the kitchen drawer, maybe used one a time or two, and—let’s be honest—you've probably had a close call with that ultra-sharp blade. But don't sweat it, I've got your back!
1. Basic Technique
First things first: it’s all about the technique. I personally love the Quirelois mandoline from Chiba because you simply hold it firmly with one hand and the food with the other. Always keep your fingers clear of the blade and make sure the mandoline is on a flat, stable surface. Give the food a gentle push and let the mandoline do the work. Let the blade glide through with steady, even pressure. No rushing here—slow and steady wins the (cut-free) race.
2. Sharp Blades Are Safer Than Dull Blades
Just like with kitchen knives, a sharp mandoline blade is actually safer than a dull one. Why? Because a sharp blade slices effortlessly, requiring minimal pressure. A dull blade, on the other hand, forces you to push harder, increasing the chances of slipping and losing control. This is when serious injuries happen. If your mandoline feels like it’s resisting, it might be time to replace or sharpen the blade. Keeping it razor-sharp will make slicing smoother, safer, and more precise.
3. Use the Guard
Okay, this one’s non-negotiable. Use the guard. You know that little plastic thingy that came with your mandoline? That’s your new best friend. It might seem like an extra step, but trust us, it's there for a reason. The guard will protect your fingers from getting too close to the blade and will help you get even slices without risking a trip to the hospital.
4. Get a Cut-Resistant Glove
We’re all about being smart in the kitchen. While the guard will do its job, there’s no harm in giving yourself a little extra protection. Cut-resistant gloves are like a bulletproof vest for your hands. They add an extra layer of safety, especially when you’re close to the blade. Some ingredients are too awkward with the guard, and with those a cut-resistant glove is a must. So, just slip one on and keep slicing without worrying about losing a finger.
5. Don’t Be a Hero, Chuck the Tip
We've all been there: you’re slicing and you’re just so close to the perfect piece of vegetable, but that pesky last little bit of food is hanging on by a thread. It’s tempting to hold onto it, right? Wrong. Let go and toss it in the compost bin. That “hero move” could end up in a trip to the ER. Mandolines are sharp, and the last thing you want is to take a slice for the team.
