About the Shape - Inspired by the profile of a traditional European chef knife, Gyutos are a multi purpose knife with a slight meat cutting bias. “Gyuto” translates to “cow sword.” If you want one knife to do it all, This is it. Starting at 180mm, Gyutos can reach the ridiculously long (and awesome) 370mm. For the at-home or professional cook, we recommend a Gyuto which measures between 210mm and 270mm long.

About Shizu Gen - Shizu Hamono is a relatively “new” knife maker, established in 1959 in Seki by Masami Horibe, he grew in Seki city, the city of blacksmiths, and naturally became a craftsman. Producing a stable Kuro-uchi finish on stainless steel was challenging, so they tackled it head-on with the goal of producing “Real Kuro-uchi”(meaning no coats or dyes) knives to achieve high performance with classic beauty and ease of care. After 29 months of research and development, they finally found the technique to create a real kuro-uchi finish on stainless steel.

VG10 Stainless steel makes these knives super sharp, reliable, and easy to care for while the pakkawood handles are elegant and rugged.

a beautiful upgrade from german steel

"I decided to treat myself to a new knife after 25 years with German steel. I absolutely love my Shizu. Although the handle is offset slightly (designed for a righthanded user and I'm a lefty), I actually find the bevel lines up really nicely with my thumb. The difference in performance is noteworthy. My Shizu slides through everything like 'butta, and doesn't leave me with accordionated spring onions (pet peeve on my old knife). The only thing I needed to get used to, and it's minor, is that the heel is a razor point. that's not a flaw, just requires some more attention"

Q&A

What size guard would i need for this blade?
You'll want a 250mm blade guard for a 210mm blade so that the heel or the tip don't poke out :)
I am looking to purchase my first nice Japanese knife, and was wondering is this would be one you recommend. I want something that is versatile and can be used for all purposes. That doesn’t require much maintenance, but can be sharpened without too much difficulty and will hold a nice edge but still be forgiving enough to not worry too much about chipping. Thank you
