About Teruyasu Fujiwara -Fujiwara is one of the most revered names in the world of Japanese knives. The Fujiwara family started as blacksmiths in 1870, first forging farm tools, then swords. Many blacksmiths these days make a blade with a carbon steel core laminated with an outer layer of stainless steel for a high-performance knife with lower maintenance; this guy was one of the first to develop this technique.
This blade is made from Shirogami steel, called ‘white carbon’ in English, and while it requires care to avoid rust, it gets sharper than just about any other knife steel out there. The rough ‘nashiji’ finish is inspired by the skin of an Asian pear and shows off the hard work and care that goes into making his knives.
At Knifewear, saying “I own a Fujiwara” is basically a secret handshake that tells everyone you have fantastic taste in knives. The Fujiwara family started as blacksmiths in 1870, first forging farm tools, then swords. Today, their name is one of the most revered in the world of Japanese knives.
About the Shape - Inspired by the profile of a traditional European chef knife, Gyutos are a multi-purpose knife with a slight meat cutting bias. “Gyuto” translates to a “cow sword.” If you want one knife to do it all, This is it. Starting at 180mm, Gyutos can reach the ridiculously long (and awesome) 370mm. For the at-home or professional cook, we recommend a Gyuto which measures between 210mm and 270mm long.

"This is my first legitimate Japanese knife and I'm absolutely loving it! The difference in sharpness with my cheap knives is night and day."
"Very light and super sharp. . . . the traditional D handle fits my hand very well. Shirogami no. 1 steel sharpens easy when compared to other high end steels and nothing out there gets as sharp. Just remember that like most very hard high carbon steel it is brittle and requires a little care."
"Perfect balance with excellent edge retention. Buy your self a Fujiwara, you won’t regret it!!!"
"The Teruyasu Fujiwara nashiji gyuto 210 mm is actually a remarkable and outstanding knife. The first time I handled it, I noticed that it was perfectly balance. The oval magnolia D-shaped handle provides a comfortable and perfect grip. Its razor-sharp edge and blade weight make it superb for cutting easily vegetables and meat. The edge retention is quite good, so it does not need to be sharpened often. The nashiji (pear skin) finish gives an excellent food separation and a gorgeous rustic appearance on this knife. The fact that is made of high carbon steel (shirogami #1) makes it somehow... epic! I am really satisfied with this absolutely awesome knife... I would certainly buy it again."
"This is an amazing knife. The balance is utterly perfect. The white #1 steel is an absolute joy to cut with. The handle on this one comes unfinished which I love. Out of the box sharpness was pretty good as well. Can’t say enough good things!"
"Absolutely amazing quality knife! Light, comfortable, razor sharp and keeps its edge. New favourite out of my entire kit!"
"Shirogami #1 is where it's at! This steel has some of the greatest 'bite' I've experienced while cutting! Haven't put it to stone yet, so far just the white and black ceramic rods. The blade is heftier than a laser like the Takamura R2 gyuto, but its weight is not a downside. TF knives can be a lottery for fit and finish so inspect and choose wisely! Magnolia D handle is a little rough but nothing fine grit sandpaper can't fix. Provides decent grip. Nashiji finish is beautiful and sharpness ootb was very usable."
