About Fujita Kinzoku Hard-Tempered Frying Pan - Made outside of Osaka, in the Frying Pan Village, these pans are lathed to shape instead of simply pressed, which means the side of the pans is thinner than the bottom, making the pans have better heat conductivity on the side. The sides get hot quicker and stay hot longer, making them better for stir-frying and sautéing.
These pans are treated with a process called “hard tempering”. Each pan is placed under a super hot gas flame, then oil is applied for to season it. They are quite non-stick from the get-go. Our purchaser and knife sharpener, Naoto used it for testing, cooked food that are known for sticking like eggs, gyoza and fried rice, and they didn’t stick at all!

Nice pans, heat up fast

"Nice pans, heat up fast and stay hot. Well built. Only niggle for me was they are not non-stick out of the box. My pork chops stuck and the peppercorns kind of burnt into the surface and took a lot of scrubbing to remove. Also my seasoning efforts sucked. A learning curve ahead for sure but once seasoned well all will be ok. heh"

Warps easily on glass cooktop

"Beautiful pan, love the weight distribution and feel of it. I was mindful that I'd need to gradually heat this and avoid big temperature changes, but it has warped very quickly even when used with care. I'm now reading online that glass tops specifically can be prone to warping carbon steel, even on low heat settings because of how they heat, so beware if you're cooking with a glass top, and consider opting for something thicker/less prone to warping."

Could not season and warped pan on first use

"I tried cooking eggs out of the box (after washing it) and they stuck. Then I followed the instructions to season it in the oven. I repeated the process 3 times. I tried to cook eggs in olive oil and immediately everything stuck. Then I tried to follow Kenji from serious eats method of burning the oil on using a burner. I followed the suggestion to let it heat up on low (using induction) for 10 mins before moving up to med high. Immediately the center of the pan bowed up and now is convex. Basically the pan is garbage now and a waste of 60 dollars. I don't know if I did something wrong or if this pan is incompatible with induction but really bad experience with it."

Bit of a learning curve but overall very happy

"Through regular use the pan quickly develops a good almost non-stick seasoning. Food releases well and anything that's left cleans very easy due to the super smooth finish and the pan only seems to continue to get better with use."

"Popped in to the shop to see what was new and the blue hue of this pan on the wall jumped out at me. Washed the pan and got right to cooking steaks then bacon, then eggs. I would say its pretty well seasoned right out of the box. Lightweight, reactive and versatile."

Great little pan

"It is well made, light weight and the handle is fairly comfortable (it does get pretty hot when cooking). To me, it’s a good balance between giving a decent sear (like steak) while being more versatile than a cast iron pan. I followed Knifewear’s how to season a carbon steel pan YT video, and kept adding seasoning as I cook; am really liking this pan so far. Would be great if it is a bit taller, but that’s just me nip picking."
